What is ”Small-Batch” BBQ and where is the 

Texas Hill Country?

To us, Small-Batch means doing it the way it was always meant to be done- slow, intentional, and with respect for the process. We don’t mass-produce. We craft. Each cut is smoked with care, and when it’s gone, it’s gone. Smile. 

We’re rooted in the Hill Country of Texas, just north of San Antonio. Out here we don’t drown meat in sauce or hide behind gimmicks. It’s all about slow smoke, dry rub, and local wood that adds deep, original flavor unique to us. Around here, patience is part of the process. 

Who we are

Married to the Pit- and Each Other

He handles the heat, she handles the hustle. 

We are Raul and Alexis Gallardo- the husband-and-wife duo behind Rollin’ Smoke Barbecue. What started as a passion for competition cooking and community service through the Bulverde Lions Club has grown into something bigger.  And yep, you’ll still catch us at the competitions that matter to us- the ones with purpose, fun, and good people.

01: The Pit

We roll with a custom-built, double-axle mobile pit that can smoke up to 12 briskets at a time. It’s designed for precision, consistency, and serious barbecue.

The insulated firebox burns low and slow, while heavy-duty steel construction retains heat and holds steady temps- even in wind and cold. Adjustable vents and dampers give us full control over airflow, temperature, and smoke levels. 

Reverse-flow technology keeps the heat and smoke moving evenly across the pit, so every cut gets the attention it deserves. 

From the wood we burn to the meat we source and packaging we ship in- every step is chosen with purpose.

We partner with suppliers who share our commitment to sustainability, and we take pride in running a business that respects both people and the planet.

We offer nationwide shipping with a typical transit time of 48 hours (ground or air shipping depending on your distance from Texas). 

Every order is shipped frozen, packed with industry-tested materials that keep your barbeque protected and properly chilled.

Once it arrives, you can heat it up right away or store it in the freezer for later. You do you!

We source whole cuts, not portions, and only work with suppliers we trust. 

We hand-select Certified USDA premium-grade cuts that meet our specific standards not just for marbling and grade, but for size, shape, and thickness. Consistency in the cut means consistent cook times, tenderness, and bark formation. 

It costs more. And it’s worth it.

Our briskets are USDA Prime Grade Beef. This heritage breed of cattle is raised in the grain-rich areas of the Great Plains and is renowned for its genetics and natural marbling resulting in buttery flavor, juiciness and lush tenderness.

Our turkey breasts are USDA Natural, which means no antibiotics, no preservatives, no added hormones, never fed animal by-products, and contain no artificial ingredients.

H-E-B Natural Pork Butt

Our Pork products are USDA Natural raised on American farms, which means no antibiotics, no preservatives, no added hormones, never fed animal by-products, and contain no artificial ingredients.
