Small-Batch Hill Country BBQ
(Preferred Method for Perfect Texture): Sous Vide
- Preheat your sous vide cooker to 165°F (74°C).
- Place the frozen BBQ meats in our vacuum-sealed bag or a high-quality, freezer-safe zip-lock bag. Make sure the bag is properly sealed.
- Submerge the bagged meat completely in the water bath.
- Cook for 1.5 to 2 hours, depending on the thickness of the meat. Thinner cuts (like ribs) may take 1.5 hours, while thicker cuts (like brisket) may need the full 2 hours.
- Remove from the bag, pat dry if necessary, and finish on a hot grill or skillet for 2–3 minutes per side to refresh the bark.
- Serve hot and enjoy that perfectly tender BBQ!
Alternative Method: Oven (traditional or convection)
- Preheat your oven to 275°F (135°C).
- Place the frozen BBQ meats in a foil-covered baking dish. Add a small amount of water or broth to the bottom of the dish to keep the meat moist.
- Cover tightly with aluminum foil to lock in moisture.
- Bake for 45 minutes to 1 hour, depending on the thickness of the meat.
- Remove the foil and broil for 2–3 minutes to crisp up the exterior, if desired.
- Serve hot and enjoy!
(Quickest Method): Microwave
- Place the frozen BBQ meats on a microwave-safe plate.
- Cover with a damp paper towel to retain moisture.
- Set the microwave to 50% power (medium heat).
- Heat in 2-minute intervals, flipping the meat and checking for warmth after each interval.
- Continue heating until thoroughly warmed, approximately 6–8 minutes depending on thickness.
- Let it rest for 1–2 minutes before serving.
Stovetop (Great for thawed Carolina-Style Chopped Pork)
- Thaw meat fully
- Heat a non-stick pan over medium heat Check out our preferred non-stick pans here Amazon link
- Add a splash of broth or BBQ juices from the bag
- Add the BBQ meat and cover with a lid.
- Stir occasionally and heat for 5–7 minutes or until warmed through.
Pro Tip : Use a lid to trap steam and prevent drying out.
